Smart Kitchens, Sustainable Futures: Inside LaBel Foodservice's High-Tech Project at Cal Poly

LaBel Food Service partnered with the Culinary Institute of America's (CIA) culinary team, and Pure Food to create a boldly imaginative project for Cal Poly's new teaching kitchen and sensory lab. Brad LaBel worked with Pure Food Principal and fellow CIA alum Brad Barnes to design a culinary teaching facility using smart technology to maximize energy efficiency and minimize waste.


This facility, located in Cal Poly's new Boswell Ag Tech Center, now serves as a hub for students and faculty to explore solutions to drive the food industry forward. With the world's growing environmental concerns, LaBel's design helps Cal Poly's mission to address issues such as food waste, improved nutrition, and food safety through their teaching facility.

LaBel used an intelligent demand control kitchen ventilation system (DCKV) to take this project to the next level by slashing energy costs and preventing tons of greenhouse gas emissions per year. LaBel installed ECOAZUR®, the industry’s most advanced DCKV system, to create a facility that optimizes sustainability and comfort.


LaBel included multiple kitchen hoods by Accurex with the DCKV system, all ducted to one single exhaust fan, to manage airflow requirements and ensure maximum possible energy savings.

The typical commercial kitchen uses exhaust and supply fans that run continuously throughout the day, regardless of how much cooking is taking place. ECOAZUR®, however, uses an advanced sensor system using blue light to detect temperature changes, smoke, steam, and fumes in real time. The advanced sensor allows the system to monitor and adjust the speed and intensity of exhaust hoods to optimize kitchen temperatures and air flow.
